Bruce loves the lemon and poppyseed combination, so I thought I would make lemon and poppyseed waffles for breakfast this morning. This recipe is based on the King Arthur Sourdough Pancake or Waffles recipe.
Serves 8
Overnight sponge
- 2 cups (240g) King Arthur Unbleached All-Purpose Flour
- 1 cup (227g) sourdough starter, unfed/discard
- 2 tablespoons (28g) granulated sugar
- 3 tablespoons of lemon juice, strained
- 2 cups coconut milk minus 3 tablespoons
Batter
- all of the overnight sponge
- 2 large eggs
- 1/3 cup of poppyseeds
- 1/4 cup (50g) vegetable oil or 4 tablespoons (57g) butter, melted
- 3/4 teaspoon salt
- 1 teaspoon baking soda
Tools:
Large bowl, small bowl, whisk, 2 cup measuring cup, fork, waffle maker, cooling rack, plastic wrap or some other way to cover the overnight sponge
Instructions for overnight sponge
- The night before you want to make waffles, you need to make the overnight sponge.
- Put 3 tablespoons of lemon juice into a 2 cup measuring cup. Add coconut milk into the 2 cup measuring cup to make a total of 2 cups of liquid.
- In the large bowl, whisk the lemon and coconut milk together with the starter, flour, and sugar together.
- Cover the bowl with plastic wrap or some other method.
- Let rest at room temperature (70 degrees F) overnight (about 12 hours).
Instructions for the batter
- Heat up your waffle maker while you mix up the batter. It is important that the waffle maker is hot before pouring the batter in it.
- In the small bowl, beat the eggs and oil or melted butter together.
- Add the egg mixture to the overnight sponge in the large bowl and stir it to just combine.
- Add the poppyseeds, salt, and baking soda to the batter in the large bowl. Stir to combine.
- The baking soda will react with the sourdough starter and the lemon juice, producing bubbles.
- Following the instructions for your waffle maker, add the batter to the waffle maker and bake.
- Once the waffles are done, remove from the waffle maker and place on a cooling rack or eat right way.
Notes:
Maple syrup is delicious on these waffles.

Need to make this. I’ve already got a sourdough waffle recipe but the addition of lemon juice and poppy seeds sounds delicious!

I loved how it came out and I used a lot of poppyseeds since Bruce loves them so much. You might want to try less for a start.
