Instant Pot Air Fryer Lid Potatoes

I often make roasted potatoes with olive oil, rosemary, and salt. When I serve them, I am always asked for the the recipe. I’ve made these potatoes in the oven and on the grill. There is nothing like a cast iron skillet to make these beautiful crispy potato bites. They do use more oil than I would like, so I wanted to try to make something similar in my Instant Pot with my new Instant Pot Air Fryer Lid.

Instant Pot Air Fryer Lid

To save on washing up, I used the air fryer basket that came with the Instant Pot to pressure cook the potatoes first.

Serves 4

Ingredients

  • 2 cups small red potatoes, cut into quarters or fingerlings cut into thirds
  • 1 cup of water
  • 1 tablespoon of olive oil
  • 1 tablespoon of rosemary leaves, fresh or dry
  • 1 teaspoon of Kosher salt

Tools:

Instant Pot, Instant Pot Air Fryer Lid, knife, cutting board, and a wooden spoon

Instructions

  1. Wash and cut up the potatoes, and put them into the air fryer basket
  2. Pour 1 cup of water in the bottom of Instant Pot Inner Pot
  3. Put the air fryer basket into the Inner Pot
  4. Sprinkle the rosemary over the potatoes
  5. Place the lid on the instant pot and set the valve to seal
  6. Set the manual pressure to 8 minutes and start
  7. When the timer goes off, hit cancel or turn the instant pot off
  8. Quick release the pressure from the pot and unplug the Instant Pot
  9. Remove the hot air fryer basket from the Inner Pot, and leave the potatoes in the air fryer basket
  10. Carefully remove the hot Inner Pot, and dump out the hot water
  11. Put the Inner Pot back into the Instant Pot
  12. Put the air fryer basket back with the potatoes back into the Inner Pot
  13. Drizzle the oil onto the potatoes and toss with the wooden spoon
  14. Put the Instant Pot Air Fryer lid on the Instant Pot and plug it in
  15. Set the Instant Pot Air Fryer lid to Broil and the timer for 15 minutes
  16. When the timer goes off, remove the Air Fryer lid and put it on the Air Fryer Lid resting pad.
  17. The top of potatoes should be brown, stir the potatoes so the bottoms are facing up. You want to brown the bottoms of the potatoes as well.
  18. Set the Instant Pot Air Fryer lid to Broil and the timer for 10 minutes
  19. When the timer goes off, remove the Air Fryer lid and put it on the Air Fryer Lid resting pad.
  20. Carefully remove the hot air fryer basket and dump the potatoes into a severing bowl.
  21. Sprinkle the salt onto the hot potatoes.

Notes:

I use an Evo Oil Sprayer to lightly coat the potatoes. It doesn’t use as much oil.
