I tossed this together using the flavored honey purchased in Golden, CO at Brojn’s Colorado Honey and the Palisade peaches and plums purchased at Heinie’s Market. This time of year, the peaches are so sweet and juicy.
I didn’t take a picture of the finished dessert.
Serves 4
Ingredients
Macerated Stone Fruits with Lavender Honey
- 4 ripe peaches, peeled and cut into bite sized chunks (Palisade peaches are so gorgeous now.)
- 6 to 8 small red ripe plums, cut into pieces
- 1 tablespoon of fresh mint, in a chiffonade cut
- 2 tablespoons of lavender flavored honey
- 1/4 teaspoon salt
Vanilla Flavored Honey Whipped Cream
- 2/3 cup heavy whipping cream
- 1 tablespoon vanilla flavored honey
Garnish
- 4 mint sprigs (2 or 4 leaves attached to the stem)
Tools:
Cutting board, knife, peeler, medium sized bowl, cover for bowl, spoon, mixer, bowl for mixer, spoon, 4 bowls for serving
Instructions
Macerated Stone Fruits with Lavender Honey
- Wash and peel the peaches with the peeler. Cut the peaches in half and remove the pits. Cut the peaches into bite sized chunks and place in medium sized bowl.
- Wash the small red plums. Cut along the pit on each side of the pit. Cut along the bottom of the pit. (Just for the cook: Pop the pit into your mouth and eat the remaining plum flesh from the pit.) Put the plum flesh in with the peaches.
- Wash and chiffonade the fresh mint leaves. Sprinkle over the peaches and plums in bowl.
- Drizzle the 2 tablespoons of honey over the peaches and plums in the bowl. Add the salt.
- Stir together, cover bowl and place in refrigerator for at least one hour and up to four hours.
Right before serving, make the whipped cream.
Vanilla Honey Flavored Whipped Cream
- Pour the heavy whipping cream into a bowl your mixer can use. Set up your mixer to beat the cream.
- Start your mixer and slowly drizzle the honey into the cream.
- Whip the cream until it forms stiff peaks.
Assemble the dessert right before serving.
- Spoon a fourth of the fruit into each serving bowl.
- Spoon a fourth of the whipped cream in a dollop on top of the fruit.
- Garnish with a mint sprig on one side of the whipped cream.
- Serve!
Notes:
If you can’t find small plums, use two large ripe red or black plums and cut them into bite sized chunks. You are looking for a color contrast between the yellow peaches and the plums, so don’t use yellow fleshed plums.
Since guest usually want to help, it is easy to have them divide the fruit into to serving bowls while you whip the cream.
