Busy Day Processing Cucumbers

On August 22, I spent sometime making cucumber and mint water. We been drinking a lot of it. It is cool and refreshing after gardening and yard work.

Bruce is a snack person, so I try to make healthy snacks for him. I had read something about cucumber chips some time ago. I looked them up and they seemed easy to make. Instead of a mandolin, I used my food processor to slice the cucumbers. It went through them very fast.

I patted the cucumber slices dry and put the slices in a bowl. I added the salt, apple vinegar, and a small amount of oil to the bowl. I tossed everything together. I placed the slices on the trays of my old Ronco dehydrator. I left the cucumber slices to dehydrate overnight.

I made a Greek salad without lettuce.

I had noticed a recipe for a Pierogi Cassarole while looking for more cucumber recipes and decided to give the Pierogi Cassarole a try. It was amazing comfort food. Bringing it to a potluck would make you a star. I made Mizeria (Polish Cucumbers in Sour Cream to go with it.

I did not take any pictures, so I am just going to end with the previous day’s sunset.

  1. Pierogi Casserole, you say? I may have to try that. My Mom was Polish/Ukrainian and produced pierogis to die for. Actual chance of me making it is slim given I pretty much stick to the microwave these days but – hey! – who knows, I might get foolishly inspired.

    1. The pierogi casserole was very good. Originally, we ate it as an entree. Later, we ate smaller servings as a side as a potato dish. I think it would be just as good without the bacon and more caramelized onion to replace the bacon. It went really fast. Bruce and I love mashed potatoes. đŸ¥”

      Cucumbers just don’t agree with some people.
