I seem to recall seeing Japanese cucumbers on your photos. Is that right? If so, have you ever tried sunomono? It’s a vinegared treatment of Japanese cucumbers that is so light, fresh and refreshing! Super easy to make just remember to slice ultra thin on mandolin or equivalent.

Yes, I did have some Japanese cucumbers. Now, sadly, they have gone to the Great Cucumber Trellis in the Sky.
I have not tried sunomono. I’ll have to look it up. I do make refrigerator pickles.
