This recipe was something I threw together to use up some leftovers from toco night along with some fresh items. It was delicious!
Serves 2
Ingredients
- 2 large flour tortillas
- 8 frozen tater tots
- 1/4 cup of refried beans (or mashed black beans)
- 4 eggs
- 1/8 teaspoon salt
- Fresh ground pepper to taste
- 2 to 4 tablespoons of salsa
- 2 to 4 tablespoons of guacamole (optional)
- 1/2 cup of Mexican style chorizo or ground beef with toco seasoning. Bulk breakfast sausage works as well
- 1/2 cup of shredded cheese, such as cheddar, Pepper Jack, Manchego, etc
Tools:
Sheet pan, small pot, medium size bowl, medium sized skillet, a skillet large enough to allow the tortillas to cover the bottom, grater, tongs, paper towel lined plate, two plates
Instructions
- Follow the instructions on the package to cook the tater tots in the oven.
- As the tater tots are cooking, heat the beans in the small pot on low, fry the sausage in the medium sized skillet, making sure to break it up. When the sausage is cooked, place on paper towel lined plate.
- Beat the eggs together in the medium sized bowl, add salt and pepper o the eggs and beat until salt and pepper are incorporated.
- Heat the large skillet over medium high. Place one flour tortilla onto the bottom of the skillet, flip the tortilla over when brown spots appear on the side touching the skillet. Cook one more minute and remove to a plate. Repeat with second tortilla.
- When the beans are warm, spread half the beans down the middle of a tortilla, leaving at least 3 inches clear on each side that you will fold. Leave at least 4 inches around the edge of the tortilla. Repeat with second tortilla. You can leave more space at the top and bottom.
- Add 1/2 the sausage in a line down the middle of each tortilla, leaving the edges clear. Sprinkle each tortilla with 1/4 cup of cheese in the middle, leaving the edges clear.
- When the tater tots are cooked, remove from oven. Place four tots in a line along the center of the tortilla, on top of the beans, sausage and cheese
- Scramble the eggs in the pan you cooked the sausage in. Divide the scrambled eggs in half and place each half on top of line of tater tots
- Top the eggs with at least 1 tablespoons salsa and 1 tablespoon of guacamole for each tortilla. Add more salsa and guacamole to taste.
- Roll up the tortillas in the direction the tater tots are lined up in, being sure to fold the ends to keep the filling inside
Notes:
I had made chorizo tocos the night before. I had leftover beans and cooked chorizo. I just heated them in the microwave. I had leftover homemade guacamole as well.

Whoo! You have a strong stomach to eat such a hearty breakfast! It sounds delicious, though. 😊

We got use to having the occasional breakfast burrito when we lived in Colorado. They were always a special treat! I really miss Bonfire Burritos!

You must have enough wood to have a bonfire in your back yard. Of course the good scents from your cooking will draw neighbors! 😆

We do have enough wood for a bonfire. We are going to have one and invite some friends over when we have a nice Saturday.
